organize iphone home folders from a mac

Is there a way to organize my iPhone home folders from a Mac when my phone is plugged in? This is an ACCESSIBILITY ISSUE, probably a huge issue for people with disabilities. It is extremely tedious to drag and drop each app into folders on different pages. It would be much easier to do on a large screen where I could use a mouse and keyboard. I have 100s of apps, it would take my 20 hours to do this one app at a time on multiple folders across multiple pages. Bring back iTunes or Apple Configurator 2! Or please add this functionality to Finder!!
