This key represents a built-in function that is bound to the built-in default music player on your Mac, so you may not be able to change it.
However, you might try changing your default music player on your Mac to see if that works. First, find where your music files are stored on your Mac. The default is [yourhomefolder]/Music, but you can find out for sure on your Mac by opening the Music app and selecting Music > Settings > Files from the menu bar. You should see the location for you Music files here.
Once found, find one of your songs and follow the these steps to change your default music app.
Permanently change the app used to open all files of a particular type
1. On your Mac, click the Finder icon in the Dock to open a Finder window.
2. Select a file, then choose File > Get Info.
3. You can also Control-click the file, then choose Get Info.
4. In the Info window, click the arrow next to “Open with.”
5. Click the pop-up menu, choose an app, then click Change All.

When you restart your Mac, try pressing the F8 key to see if it automatically opens the music program you just set.

When you press the F8 key, it should automatically launch the Music app on a Mac. Unless you have these keys set as standard function keys. You can check this in the Keyboard settings on your Mac.
