Generally standing is recorded if you swing your Apple Watch arm back and forth (as you would when walking) for between 30 and 60 times in a short interval (1 to 2 minutes).
Interrupt the swing counts for long enough, and you have to start over. If you do 10 swings, nothing, 10 swings, nothing, 10 swings it mostly does not count, and if you do that kind of swing behavior enough, sometimes it takes more than 60 consecutive swings to get credit.
If you are carrying something, pushing a baby carriage, holding your arm steady (broken arm in a sling for example), then you can walk all you want and not get credit.
There are professional chefs that spend all day in the kitchen on their feet, but because their Apple Watch arm is always carrying something, or holding something, etc... they do not get the needed 30-60 consecutive swings within a brief period of time, and will miss getting stand credit.
Then again, knitters can sit all day long, and have fantastic stand credits, and step counts, because their arms are making a motion that the Apple Watch sees as arm swinging.

So it has nothing to do with standing!! And all about arm swings. Your examples were excellent. I just tested it sitting in my chair hammock; didn’t stand, but swung my arm the required times and BINGO -registered as a valid stand. You’ve made my life better ;-)
