Payment "Done" with checkmark, but no payment made
Paying with ApplePay, double tapped power button to confirm, "Done" shown at bottom of screen with a little checkmark, but no payment made, no transaction on credit card.

Ask the credit card company whether they approved the transaction or not. A merchant may have done a zero Dollar transaction and just verified the account and availability of funds. Apple Pay is just a secure conduit for data to travel between the merchant and the credit card servicer. Apple can’t approve or decline a transaction, can’t initiate transfer of funds, can’t cancel a transaction. Your answers are with your bank.
