Can You Have More Than One iPhone Backup?

Read this article by Apple: Locate backups of your iPhone, iPad, and iPod touch. Here's a link: Locate backups of your iPhone, iPad, and iPod touch - Apple Support

I was going through it out of simple curiosity, but surprised to see (we have three devices) only one backup for my iPhone, only one backup for my wife's iPhone and only one backup for her iPad. Yet, every time we do an iOS update (on this MacBook Pro) I make sure that the "backup to this Mac" has been done.

So, does Apple somehow limit the device backups to one each, and if not, how does one increase the number of backups? When I first started this exercise I fully expected to find a CCC or ChronoSync type of backup list, where I could go back months and months with the restore.

suppose given the size they override the older backup not to fill the storage of the users

but you can physically make a copy of the back before it's overridden
