Trying to add a number to a group text. I click on all the people in the group text, scroll to the bottom of the list of current members to where “Add Contact” should be and it isn’t there. Any ideas?

If anyone in the group is using SMS, that feature will not be available. You'll need to start an entirely new conversation.

You may consider creating an SMS/MMS group message to have all of your contacts added. Learn more about that here: What is the difference between iMessage and SMS/MMS? - Apple Support
