Sync iPhone and iPad email
Recently they have not been syncing so I have to delete on both devices. How do I fix this?

What type of Mail account is this? For example, iCloud, Gmail, Outlook, etc.
You mentioned that emails deleted from one device, are not deleted on the other. Are you able to check the webmail version of your account to see if the emails are deleted on the server level?
You can also check to ensure that your Mail settings are correct by using: Mail Settings Lookup To see if the settings match what is on your iPhone and iPad, go to Settings > Mail > Accounts > Tap email account > Advanced.
