how do I retrieve the screen that we used to get when we swiped up?
When I swiped up, I was able to see symbols to find my iPhone that was on my watch actually but to silence the phone, etc.

Although it's hard to tell, here is what I think you're asking about.
On the Apple Watch, before watchOS 10, swiping up used to reveal Control Center. It no longer does. With watchOS 10, briefly pressing the side button performs this function.
