Pairing Apple Watch 7+ and iPhone 15 Pro

I ordered iPhone 15 Pro and Apple Watch series 9 for my wife at the same time. The watch gets here tomorrow (Monday Oct 2nd) but the iPhone doesn't get here until the end of October. She has a 7 plus phone which cannot be upgraded beyond iOS 15.7.9 - Will this old phone at least pair with her series 9 watch? Perhaps we hang onto her Series 8 watch before sending it back so that we can still use her watch for exercising. I'll have to see how much time we have before we have to send it back.

Somebody messed up with stock levels to meet the high demand it seems. Right off the bat Apple have no iPhone 15 Pros to ship customers either at stores or online. It's possible it was planned that way but really?

Maybe she can be a second user on my iPhone 11 Pro for now?

The return window for her existing Apple Watch 8 series is 14 days after we receive the return kit. We don't have the kit yet so if it arrives tomorrow we have until the 16th October. The new iPhone doesn't get here until 9 to 14 days later. I am expecting a message from the new watch to say it is not compatible with iPhone 7+ when we try to pair the watch and the phone, which will mess up her exercise record. So far she has met the target exercise routines every day for 365 days in a row. I think I should go fishing for a week or two.
