Upgraded to macOS Sonoma a couple days ago.
Crashed 4x in the last two days when using QuickTime Player, 2x when using it to record video, 2x when using it to play .mp4 files. On each occasion a report was forwarded to Apple.
Any known fixes?

I switched over to Elmedia Player https://www.elmedia-video-player.com/ and things seem to be working ok. There's a free version and a paid version . . . and here's a site that will show you how to change Elmedia to your default video file viewer: https://recorder.easeus.com/screen-recording-resource/change-default-video-player-mac.html
For me the problem was solved when I disconnected my external monitor in mirror mode. When I have to have the monitor connected in mirror mode (which is most of the time) and I need to view a video I use VLC or just the space bar/quick-look function.
Try these:
QuickTime Player > Services Settings... > Restore Defaults.
Settings > Desktop and Dock > Click wallpaper to reveal desktop: "Only in stage manager"
Settings > Desktop and Dock > Stage Manager: OFF
Quit Quicktime Player, and try if moving these folders to the Desktop folder (just in case before deleting them) helps:
~/Library/Containers/QuickTime Player
~/Library/Containers/com.apple.QuickTimePlayerX/Data
If not, try to make a dummy user and see if Quicktime Player works in that account.
I have to show a video to the board of a Fortune 500 company and ran into this issue in every conference room running on TV's. I was going to go borrow a PC to have something that worked, but instead can run it in VLC player. I just wasted 2 hours I didn't have in trying to resolve this when I finally found this thread.
It does not resolve for me in this way either. I have had this problem for multiple months now. Huge productivity blocker in workflow for my clients. Creating video summaries of customer insights is a key component of what I do for tech companies building consumer Gen AI products. Clients have been forgiving for the last 4-5 months since this issue developed but also not looking forward to reverting to Ventura.
We don't have the problem on our five Macs. That notwithstanding, try VLC or Cisdem players while Apple works on a possible bug fix.

At this point, it's very soon after Sonoma's birth so as is the usual case many bug fixes and security updates will be forthcoming.
Ditto - I'm able to play .mp4 files in my video editor: Camtasia.
The issue seems - in my case - to be QuickTime generally rather than .mp4 files in particular.
I have the same problem. Super annoying! Thankfully, I was able to get around it by playing videos with either VLC player or Elmedia player.
having same prob. newest Imac M3, crashing on quicktime 5x today already !
Go and try other free media player like VLC or IINA. No problem using them macOS 14.2. However, both of them don't have the screen recording feature.
I don't have any displays attached and Quicktime crashes constantly. I've tried downloading it again, updating Sonoma again, cold re-booting. Nothing works.

Yes, same issue here when connected to Thunderbolt display, which previous to Sonoma worked fine.
