My CarPlay in 2019 Toyota RAV4 seems to still be looking for my previous iPhones, 12 Pro Max and 14 Pro Max, QC-12(?) but does see my new 15 Pro Max. Anyone know how to delete the old ones from the list?

You need to look in settings for your car radio and find how to delete or manage devices. There is no one way to tell you because all car radios are not the same. On your pic it looks like the settings option is at the lower right corner. Click on that and see where it takes you.
Then either refer to the owners manual which came with your car or contact Toyota ask how to remove devices you no longer own. Every car infotainment system is different in this regard.
Clicking on that "settings wheel" just brings up device info of the wireless adapter.
