If your phone says "SOS" where the signal bars usually are, it's because you are in an area where your phone cannot connect to the towers for your cellular carrier.

My phone has been on SOS for the last two days I need help turning it back on my boyfriend, stole all my information and swapped phones and cards and Sims and everything

Contact your carrier about cell phone service – and/or the authorities about your boyfriend's activities.

SIMs are what tie cell phones to cellular plans – so if your boyfriend swapped SIMs, and your phone no longer has the SIM corresponding to your cellular phone account and plan, that's why it no longer has proper service.

Only the carrier can help you fix that.
