What is a little pinhole underneath the power button for on iPhone 7 there’s no Sim card tray

That would be the hole to remove the sim tray. Every iPhone 7 ever made has a sim tray slot. If you use a sim removal tool or even a paperclip and push it into the hole with a little force, it should eject the sim card in your phone. And without a sim card in the phone, you would not be able to make or receive phone calls.
