In January of 2021 I made a apple id for a phone I used for a week with my email. I then didn't use a iPhone until I got one today. When I tried to make an account with my email It said I already had a account with my email. I don't remember my Id password or what number I used for my trusted number. Is it possible for me to regain access to my account with my email only?

If you are using the account recovery process you will need to provide the trusted phone number you used previously: How to use account recovery when you can’t reset your Apple ID password - Apple Support
If you haven't already done so, you can try reaching out to your friends, family or carrier to see if they are able to assist with determining the prior phone number that you used when setting up your Apple ID.
