It sounds like you are talking about pinning conversations within the Messages app, as described here: Use Messages on your iPhone or iPad

See the following comment, mentioned there:

"In iOS 14 and iPadOS 14 and later, you can pin up to nine conversations."

There isn't a way to pin conversations on watchOS. If you wish this was a feature, we would recommend providing feedback directly to Apple here: Product Feedback

Apple reviews all feedback, but you may not hear back on any given. Apple does not request unsolicited ideas.
