The support page Use Cinematic mode on your iPhone includes the following details related to focus and auto-focus:
4. "Tap a subject in the viewfinder to change focus as you record. Double tap to set automatic focus tracking on a subject. You can also touch and hold on the screen to lock the focus at a specific distance from the camera."
If not using Cinematic mode, Use iPhone camera tools to set up your shot outlines the following:
"Before you take a photo, the iPhone camera automatically sets the focus and exposure, and face detection balances the exposure across many faces. If you want to manually adjust the focus and exposure, do the following:
- Open Camera.
- Tap the screen to show the automatic focus area and exposure setting.
- Tap where you want to move the focus area.
- Next to the focus area, drag
up or down to adjust the exposure."
