Apple says that the iPhone 15 Pro has a USB-C port with support for
- Charging
- DisplayPort
- USB 3 (up to 10Gb/s)
For a data transfer cable, you would want one that is rated for at least 10 Gbps (USB 3.1 Gen 2). A "charging cable" might transfer data at only USB 2 speeds ("up to 0.480 Gbps"), if it transferred data at all.
You don't need a Thunderbolt 3 or 4 cable – although if you have a Thunderbolt 4 certified cable lying around, that cable should be quite capable of carrying USB traffic at the speeds the iPhone 15 Pro supports.
