I have 2 HDMI screens plugged in via a USB-C dock that are extending - however the plugged in screens are mirrored to each other rather than extending (i.e. my MacBook shows 1 screen, my other 2 screens show the same thing - refer to picture)
How do I make my 2 screens also extended?

I’ve read that article and followed those steps but my other monitor doesn’t appear on the display settings to begin with.

I think adapter issue, it may be not compatible Sonoma, though Sonoma is also having several bugs.
