I’m leaving the States and just got as Iphone 14 pro max and seems unfair that I have to downgrade because of the eSIM thats a new thing now, whenever outside the States they’re still using sim/nano card using, I would love to keep my iPhone 14 pro max
If you're travelling there temporarily, get a roaming plan from an USA carrier.
If you're staying there, find a local carrier which provides eSIM support and/or get an unit there; aside from the physical SIM/eSIM issue, you'll likely be denied warranty or AppleCare service on an USA one abroad.

eSIM is NOT a “new thing”. It was first deployed 7 years ago on Samsung phones, and Apple followed shortly after. Most carriers around the world now support it, except in China, Hong Kong, Singapore and Macao→Find wireless carriers that offer eSIM service - Apple Support
