playlists not syncing
Since the most recent updates, only some of my playlists are syncing and there is still plenty of space on my iPhone

You haven't indicated if the playlists you're referring to are being synced at part of an Apple Music subscription or from a computer.
The processes for each are outlined at Use Sync Library with your Apple Music subscription for Apple Music. Sync music between your Mac and iPhone, iPad, or iPod touch or Sync iTunes content on PC with your devices would be used depending on the type of computer you're syncing from if that is the case.
If using Apple Music and Sync Library then If songs are missing from your music library after you turn on Sync Library may include helpful information to address this concern.
Other details that could play a role and change the nature of the solution are if these playlists are ones you created or if they were shared with you by other users. If you don't find an answer in these resources provide additional details as to what and how you're syncing for future replies.
