In my phone app, it shows my dad’s number as “my card” and whenever i I try to share my contact it comes up as his number. Also, when I change his contact picture it shows up as mine in settings. How do I fix this?

Troubleshooting Phone Number Consistencies:
Are you Both Using the Same Apple ID?
You each should have your own Apple IDs. If you want to have access, then you can share contacts among one another. You would need a Mac to share these. Elsewise, you'll have to add these contacts one at a time, using a mobile device. So, create a vCard, and then provide it to him: Import, export, or print contacts on iCloud.com - Apple Support
