My Bank no longer supports the older version of Safari. I need to update but am unable to do so through the App Store or the Software update

Your bank is likely to be one of them. It's them that need to change — not you.
The back story is most likely due to Apple's considerable sensitivity to protecting user privacy. Apparently, the "User Agent" query (which was always ill-advised) has been alleged to contribute to passive fingerprinting — one of many devious ways of tracking your Internet activity. So the "user agent" in this case is reporting a browser that is indeed out of date, but which may very well be compliant with all relevant security protocols.
In any event that is a long-winded way of saying "try another browser". I recommend Brave, or Firefox, and in that order.

Also, at least based upon the information about earlier macOS versions in the article https://support.mozilla.org/en-US/kb/firefox-users-macos-1012-1013-1014-moving-to-extended-support, you can probably expect Mozilla to have a supported Firefox version for macOS 10.15 Catalina almost a year or so (maybe followed by an extended support release for yet another year).
I have a 10 year old iMac. It will no longer update, telling me I have the latest version: Catalina 10.15.7. What are my options?
