We'd like to share some information to help with your Apple Watch Ultra 2. If you are referring to a cellular line of service, if you look over Apple Watch Ultra - Technical Specifications and this shows the connectivity options which are two different models. If you did not purchase the cellular version you would be unable to get a cellular line of service on the device.
