I want to use my old IPad for genealogy and not have it using up space on the new one. I sinked the two up to load all the other stuff and want a safe way to unsink without losing info. Can I still store the info in the cloud and not have the info on the new? I would like to erase the info from the new without losing it on the old one.

It sounds like you would like to turn off iCloud from syncing some info to your new iPad. If so, you can turn off iCloud for certain apps.
Settings > Tap your name > iCloud > Scroll down to find the app you'd like to stop syncing with iCloud.
