How do I delete everything from an old iPad without affecting the new one?

I have 2 ipads. I want to delete everything from the old one but not the new one. How do I do that?

I just picked up a new IPad and automatically sinked the old with the new. And now want to use them selectively I want to use my old IPad for genealogy and not have it using up space on the new one. I sinked the two up to load all the other stuff and want a safe way to unsink without losing info. Can I still store the info in the cloud and not have the info on the new? I would like to erase the info from the new without losing it on the old one. Am I making sense lol
