I'm finding the way how should I write using the terminal in MacOS like on windows ALT + 126 ASCII code when I'm connected via SSH a linux server.

Yes, that's right. Before a, o, and n you might need to type a space after Option ñ to prevent it becoming an accent mark.

I'm using a macbook air with qwerty Spanish keyboard, I tried with Option + n with the British - PC keyboard and I'm getting this character "˜", but my real intention is to use tilde to go home in a remote ubuntu server, in a Windows computer I usually do with ALT + 126.
Finally as I writing this post I could find the way how to write it using Option + Ñ with the spanish keyboard to get the Tilde character "~"

Are you talking about typing the tilde character ~ ?
What happens when you just press the key for that?
