I abhor center stage. I like the camera to stay where I point it. So APPLE - please ALLOW us to switch it off altogether, for all apps for all time. That is my preference and I deeply resent you forcing your preferences on your users.
So where is the control to turn it off forever?!

Centre Stage is only enabled for Apps that support it. For those Apps that do support Centre Stage, you must disable the feature from within the App.
By example, for FaceTime, you can disable Centre Stage from the Control Centre...
With the FaceTime App open, expose the Control Centre (swipe downwards from the top-right corner of the screen) - and then tap the Effects Centre Stage button:
Finally, deselect the effects - such as Centre Stage - that you don't wish to use:
