How I find out if my phone is bugged/tapped/ hacked etc. People know certain things that they would only know by going through my phone, plus I had a notification about a change of fingerprint when I was in the room!!

iPhone does not send Touch ID fingerprint-change notifications.

Notification to Change your Fingerprint:
Apple won't get such a message to change or manage a fingerprint. So, it is a scam. Report the to Apple. Use my User Tip: Using the Photos App to Report Scams: - User Tip
It's not. If you think there is something nefarious (eg. someone had access to your device, managed to unlock it, and then added a fingerprint -- that's improbable), factory reset the device.
