There are some 3rd party note taking apps, such as "Drafts" that has an Apple Watch app.
If you just want to capture an idea with your Apple Watch, you could use "Reminders". For example: "Hey Siri, remind me when I get home to do xyz", and a geolocation based reminder that will trigger when you get home will be entered into Reminders.
