I recently upgraded from a Samsung Galaxy s10+ to the iPhone 15 Pro Max and all of my text messages are weird, text that were not previously in group chats are now grouped together with one another, am I able to remove the extra people from these chats or do I have to delete the messages?

It sounds like you imported some text messages using the Move to iOS app.
If the import hasn't arranged these messages the way you expect, it's a result of how they were stored on your other device and isn't something you can fix.
To proceed you'll want to either erase them or continue as they are.
