Protection plan for ipad mini

I've been getting notices in my Settings to sign up for a protection plan for my ipad. I had a couple days left to sign up, but after turning on my ipad today after travelling the notice is gone and I can't find a way to sign up. I know I should have not waited until the last minute, but I've been on the road a great deal, plus had family health issues. How can I take advantage of this offer?

In most countries/regions, for eligible devices, AppleCare+ must be purchased within 60-days of initial purchase/device activation.

Upon expiry of 60-days, the opportunity to purchase an AppleCare+ plan has been lost. There are no exceptions.

If you remain eligible, you can also purchase AppleCare+ for your iPad directly from Apple’s website:
