Transferring from iPhone to iPhone problem

Hi, there's a problem that hasn't been there before. I have transferred from iPhone 6s to iPhone 7 two times before and hadn't this problem. The problem: while transferring from an old phone to the new phone, suddenly, the apps from my older device don't get downloaded with the same version they were on my previous device, they get downloaded with the latest versions, and basically, my life is ruined with all these sudden horrible new versions (and trust me, I have transferred 2 times before and the apps got downloaded with the same old versions on my previous device, and that's literally all I want right now. And 1 of the 2 times of transferring, my only purpose of resetting the new device was just to be able to get 1 app's older version back, which, I succeeded but it doesn't work anymore, I don't know what to do,) by the way, I made sure both phones were on the same software version, and it still downloads the new versions. Why wasn't it like this a few days ago? Or the first time transferring everything to iPhone 7? Now all of a sudden it downloads new versions of the apps which wasn't the case before.
