You need to actively update the Apple Watch. It’s not like the AirPods where the update occurs automatically. On your iPhone open the Watch app, go to General and the Software Update. Follow the directions on the screen.

Upon further investigation, looks like Apple no longer supports my watch. They say to update to the SE series, but when I look up SE series, it needs an iPhone 8 or newer!! What a bunch of crock!! So I need to dispose of both my watch and IPhone just to have Apple support!! Why would I do that when both run fine and do what they are suppose to do!!!
If you are attempting to update to Watch OS 10, it will not work with the iPhone 7.

I have an iPhone 7 Plus, which latest update is 15.7.9, updated it in September
My watch is 7.6.2. And I get notices on my phone that I need to update my watch. Tells me to put them together, both on chargers.
