App menu
When I try to open an app on my IPad, a list of options come up and I can't just open the app. How to u turn that off

Touch-and-hold will often expose an associated Action Menu - whereas a simple tap of an App icon will open the App.
You can refine the delay before a touch is registered by your your iPad:
Settings > Accessibility > Touch >
- Haptic Touch > Touch Duration
- Touch Accommodations
