System Settings > Keyboard > Input Sources > Edit…

FWIW, it is the same as it is in Sonoma. Just checked.
Duh! That worked - thanks. Maybe you can tell me how to add spaces/windows in Ventura without Stage Manager.
Just to add, you can disable Stage Manager in the Control Center in the Menu Bar or from System Settings > Desktop & Dock.
I figured it out, but not through Desktop & Dock. I went to Spotlight/Mission Control.app, which had not appeared in my Dock as previously. Thanks
