The Night Mode (Red) comes on when the ambient light is very low.
If you want to turn the feature completely OFF, then you can open the Watch app ➡️ Tap on the Watch Face that is currently Active on your Apple Watch Ultra ➡️ Night Mode ➡️ Tap on OFF.
