Modifying document from preview mode

I have an old resume that I would like to modify and update. However it is in preview mode. I am aware that I can annotate, but, I want to modify it more than that. How can I make this document workable.

If you have access (own/borrow) to Word 16.31 or later, you can tell MS Word to open the PDF resume and it will convert it to .docx with formatting as close as it can produce. Although there are tools to convert PDF to text in macOS Automator and Shortcuts, you lose the original formatting.

You can upload the PDF resume to Google Drive and then open it with Google Docs. Then download as a Word .docx document too.

Apple's Preview is a PDF Reader and you are limited to annotation only, as you would need a paid PDF Editor to change the underlying original PDF text.
