How do I un dim the set automatically button for date and time
I can’t turn off set automaticallly in date & time settings.

If the Time Zone settings are ghosted - and cannot be adjusted - you'll need to check (and temporarily change) your ScreenTime permissions:
Settings > ScreenTime > Content & Privacy Restrictions > [Allow Changes] Account Changes - set to Allow
In some circumstances, you may need to remove/disable the ScreenTime Passcode:
Settings > ScreenTime > Change ScreenTime Passcode > Turn Off ScreenTime Passcode
