Received a text saying my iPhone14 is trying to pay with Apple pay in China. Text is from ***. I assume is fraudulent but dropping here to be sure.

Those texts are a common scam. They most likely want you to call a number and give them your Apple ID and Password, which would allow them to lock you out of your device, or even give them your financial details.
