Troubleshooting eMail Syncing:
A. Restart your iPhone:
Having just installed an update, start with a restart: Restart your iPhone - Apple Support
B. Re-Sync the eMail Account:
Remove the eMail Account, and then add it back. If using an eMail provider, then remove this as a trusted device.
C. Use the Correct Mail Protocol:
POP3, IMAP4, and SMTP Mail Protocols:
This all has to do with the protocol used by the eMail provider for sending/receiving emails: POP3, IMAP4 or SMTP. So, contact your eMail Provider, and see which protocol to use for incoming and outgoing mail.

Use a New App Password:
Do you use an App Password? If so, try a new App Password. Sometimes, changes (i.e. updates) are made to the device, and then mail server syncing becomes an issue (which is what a new App Password it intended to fix). As an example, go here for gmail: Sign in with App Passwords - Google Account Help - Google

I don’t think I use an app password. This is the first I’m hearing of it.
My system is current with iOS 17.1
