Airprint - Landscape vs. Portrait printing
Here we are in 2023, it seems that this issue will never get resolved or… has it and I’m simply unaware?

Landscape and Portrait printing is certainly available with printers that support this capability over AirPrint.

When using AirPrint, the available print options - including page orientation and size - are advertised by your printer. When using the print dialogue on your iPad, you can only select from the advertised options.
If you are not seeing expected print options, you should check your printer's own settings. You might also check to see if a printer firmware update is available from the manufacturer of your printer.
