My Epson ET 2876 has recently refused to AirPrint. Having spoken to Epson support they say that the printer is not supported by Apple for AirPrint and the problem therefore, lies with Apple.

AFAIK, Apple does not decide, or control, what printer manufacturers do, or not do, about AirPrint support with their printers. Personally, I never heard of a situation where Apple removed AirPrint support for any make/model of printer out there.
Here is the current list from Apple about AirPrint supported printers. As you will see, this specific printer model is not on it.
