The text recognition icon in the lower right hand corner of my photos drives me nuts. Wonderful, if you’re looking for the text in a photo, horrid if you’re using the image professionally. I’d LIVE to be able to turn this thing off and on. Is this possible? I’ve searched everywhere I know!

I don't believe that's a user controlled feature. Tell Apple what new features you'd like to see added to the iOS via iPhone Feedback.
How is "text recognition in photos" a problem for you? It's a feature that most of us relish as it lets us copy and paste text found in images.
