Can I use a different iPad to download movies to take on holiday as I don’t have enough storage on my current iPad, but I don’t want to delete all my apps as I use them regularly to make more storage room!

Different iOS/iPadOS devices can have a different combination of installed Apps - and can still be synchronised via iCloud should you choose to do so. Similarly, you can delete Apps from one device without affecting your other devices.
However, there is a setting that you may need to refine on each of your devices - that, unless set correctly, may cause unwanted Apps to be automatically installed...
Settings > App Store > [Automatic Downloads] App Downloads - set to OFF

Different iPads are independent of each other. Deleting apps on one iPad is not going to delete the apps on the other. You can have it setup so that if you download on one it will download automatically on other devices such as another iPad, but if you delete it on one, it’s not going to delete on the other, and it’s only going to install on other devices if that option is selected.
sure, like if you have an iphone and ipad then 2 ipads will not match eachother with what apps are installed one can though enable that downloaded apps will also download on other devices with the same appleID but if you delete an app it will not delete elsewhere
