Mac OS Extended (Journaled, Encrypted) not available!
Using Samsung 2TB SSD, unable to find Mac OS Ext journaled, encrypted option. Used finder to encrypt, and it auto changed to APFS encrypted. Anyone else with same experience ?

What OS version were you using?
Did you format/Erase the top level, or just a container on an APFS Drive?
Apple forces APFS on SSDs at a certain OS version, can't remember for certain which.
Hmmm, I can't check Ventura or Monty right now, but here's DU in Sonoma choosing top level or a Container on a GUID SSD...
Good thing I'm hungry, I might have to eat my words! :(

OS version : tried on 2 MBPs - Monterey and Ventura. Yes, erased the top level (disk) as Extended Journaled. I have another Samsung 1TB SSD which I've encrypted with Mac OS Ext option successfully couple of years ago, so this seems new. Maybe its something to do with OSV as you've stated. Here's the link i referred that states Monterey 12 would show OS journaled with encryption option, but it does not. File system formats available in Disk Utility on Mac - Apple Palaikymas (LT).
