What is and how do I delete the "Uninstalled Apps" data on iPhone?

Uninstall apps in Settings cellular is the amount of data that was used by apps that have been deleted since the last time the statistics were reset.

Remove Uninstalled apps data usage from Settings > Cellular? Scroll to the bottom and tap Reset Statistics. That will reset all of the data usage numbers to zero and remove the Uninstalled apps category until such time as you delete an app that has cellular data usage in those statistics.
