I've tried to update my OS to a newer version (so it is compatible with some apps I am using), but I can't seem to download beyond MacOS Catalina 10.15.7

The newest version of macOS it can run is 10.15.7 Catalina.
If the Mac still does what you need it to do, continue to use it.
But you will find more and more websites that will balk at loading in Safari. For those troublesome sites, I suggest you take a look at Firefox browser or Brave browser.
Download an alternative browser and install it into your Applications folder. Launch and use that when you encounter websites that don't play well with Safari.
