Where can I find the date I canceled a subscription?
My daughter claims to have canceled a subscription prior to the end of the free trial, is there a way to see some sort of date/time stamp when she canceled the subscription?

Nope. There is no where to see the specific cancellation date.
If it is correctly cancelled, and says it will or has expired, then likely she canceled less than 24 hours before it was set to renew. Apple advises subscriptions may still be charged if this is the case, but refunds can be requested for them.
