i have bought digital tickets to a football game and I’m trying to add them to my digital wallet. But I have never used Apple Pay or the app at all, how do I set it up to be able to add my tickets from my gmail

You don't need to set it up at all. There's nothing you need to do within the Wallet App.
The ticket provider must offer a link, button to QR code in their App, in an email or on their website to add the tickets to the Wallet app.
Look for a button like this one the ticket provider's app or website:
