I get that Apple updates it's phones to new & "better" (USB-C) charging ports on the *PHONE end of the cord, but why do they have to put that same connection on the wall or PC side? Now I have to go and buy adapters to connect my phone to my computer.

I re-read your post. I agree that Apple should provide, at this point in time as they are transitioning their products to use USB-C ports, at least multiple charging cables with their newest iPhones.
Most of us still have USB-A power adapters. Currently, they appear to "push" consumers to get their USB-C adapters. Makes sense in the long run, but since they also decided to stop providing adapters with their phones, adding a second cable should not be monumental expense to them. Well, that would be my "2 cents."
My suggestion would be to let Apple know directly here: Product Feedback - Apple
Not sure if that is a rhetorical question, or not. If not, then you will need to ask Apple why as no one here (we are not Apple employees) can tell you how Apple makes their design decisions.
However, as technology moves forward, it is not uncommon to not expect changes ... and this does not only apply to computers.
